Roasted Cauliflower with Fresh Herbs and Parmesan
(this is so good even I will eat it – and come back for seconds)
6 cups cauliflower florets (about 1 head)
1 ½ Tbs olive oil
1 Tbs chopped fresh parsley (the dry stuff will work here)
2 tsp chopped fresh thyme
2 tsp chopped fresh tarragon
3 cloves of garlic – minced
¼ cup parmesan cheese
2 tbs lemon juice
½ tsp salt
¼ tsp pepper
Preheat oven to 450*
Place cauliflower in large roasting pan – drizzle with oil and toss to coat well
Bake at 450* for 20 minutes or til tender and browned – stir ever 5 min
Sprinkle with spices and garlic
Bake 5 more min
Combine cauliflower, parmesan cheese and remaining ingredients in a large bowl and toss to combine
