Scalloped Vidalia Onions
(take lots of time but not lots of attention – and are a surprise side dish the everybody likes – so far)
4 lbs Vidalia or other sweet onions – trimmed and wedged
1 ½ tsp olive oil
cooking oil to coat baking dish
2/3 cup dry cooking sherry
1 Tbs butter
2 Tbs flour
1 cup milk
¼ cup shredded gruyere cheese (smoked gruyere adds a really nice taste)
¼ tsp salt
¼ tsp pepper
Preheat oven to 400*
Place onions in 13 x 9 baking dish lightly coated with oil – drizzle with oil and toss to coat
Bake 40 min – stirring once @ 20 min
Drizzle sherry over onions – stir to combine – bake 40 min – stirring once @ 20 min
Melt butter in a small saucepan – add flour stirring til smooth – slowly add milk stirring til blended – bring to boil – cook 1 min or til thickened – remove from heat – add cheese salt and pepper – stir til cheese melted and smooth
Pour mixture over onions and stir to combine – bake at 400* for 20 min or until mixture is thick and beginning to brown on top – let stand 10 min before serving
