Spicy Shrimp and Rice Soup
(sounds strange – but one of my favorites)
4 cups chicken broth
2 cups water
1 cup instant rice (like minute rice)\
1 Tbs oil
1 tsp minced garlic
½ tsp crushed red pepper
1/1/2 lbs large shrimp – peeled and de-veined
Optional
Lime wedges
Bean sprouts
Sliced green onions
Chopped fresh cilantro
Sliced jalapeno pepper
Combine broth and water in a large saucepan and bring to a boil – stir in rice – bring to a boil – remove from heat – let stand 5 min
Heat oil in a large skillet over med-high heat – add garlic, red pepper, and shrimp – sauté 3 min or tl shrimp are done – stir shrimp mixture into broth mixture
Serve – if desired – with lime wedges and garnish with any of the optional ingredients listed above
